Going on an all inclusive cruise (except for alcoholic drinks).Is sneaking a bottle of rum onboard a big deal?
The tropical drinks they sell onboard are so expensive. I would prefer to have my own ingredients (mix, rum, etc..) in my suitcase, and make my own, in the stateroom. Are they diligent about cracking down on that?
Technically you are not allowed to do this, however I think the risk is worth the reward.
I agree that drinks are too expensive on the ship and besides that I like to not have to walk all the way to a bar to get a drink. I often like to have a glass of bourbon while sitting out on my balcony with a cigar so I usually sneak in a bottle.
As some others have said if you put in your checked bag and its reasonably hidden you are probably going to be fine. Just don’t put it on top. I often wrap a t-shirt or something around the bottle and stuff it somewhere in the middle of my luggage. If they do find it, the worst they do is confiscate it and they’ll return it to you at the end of the cruise. You won’t get booted from the ship or anything.
There are a number of ways to sneak it in. The boards on Cruise Critic have an ongoing discussion. One of the best ways I’ve heard of is using rumrunners. Have a peak at the discussion and/or check out rumrunners if you plan on try to sneak it aboard.

It depends on a number of factors. There is a lot of money made by cruise lines from on board liquor sales. They certainly would prefer to have all liquor purchased on the cruise.
That being said, they also understand human nature. People will spend thousands to take a cruise yet want to "cheat" on things like booze. Human nature.
They screen bags that come on the ships. It is possible with some lines that a small amount of liquor PACKED in suitcases will be overlooked. No guarantee. Carry-ons/handbags will likely be searched. BOXES provided by liquor sellers near ports are a RED FLAG to the ships’ security screeners so don’t even try that.
People advocate using mouthwash bottles, clear plastic water bottles and all sorts of other ways to SMUGGLE liquor on board. The simplest way it just a couple of well-wrapped plastic bottles that the liquor comes in right in your packed luggage. No one has ever made an issue and I have been on 6 cruises with four different lines.

The practice is prohibited. The "rules" state that the cruise line may confiscate the booze or even deny boarding without refund. I’ve never been caught so far as I know!
If it is a small amount they might overlook it. If you are cruising during a peak travel time for young people like spring break, they will be less tolerant.

Technically, you are not allowed to bring spirits on board cruise ships. As you know, sale of bar drinks and soft drinks is a large part of their income, and helps keep cruise fares at reasonable levels for everybody. Thus, you may find that they are getting more aggressive about the smuggling and getting much better at finding it. Also, the cabin stewards on many ships are instructed to remove all bottles they find in the cabins along with unauthorized electronics (a fire hazard). Personally, I figure that if I can’t afford to pay for a few drinks on board the ship I can’t afford to go on the cruise. After all, the prices are comparable to those found in nice bars and hotels.

I always put 2 bottles in my suit case and never have a problem. I just cruised 3 months ago and brought 2 bottles of Tequila in my suit case. My friend empties out wine bottles and refills them with the hard stuff and then he puts it in his luggage. They are not searching for alcohol, they are searching for explosives or weapons. I do not bring more than 2 bottles. Good Luck
